We know that food production has such a big impact on the environment. As much as 8-10% of greenhouse gas emissions are the result of food waste, which counts for over 30% of global food loss and waste each year.
As one of the world’s largest catering businesses, ISS is partnered with UK-based tech firm Winnow to help cut food waste in some 331 sites worldwide. Food waste is an ongoing issue in busy commercial kitchens where food is prepared in advance and waste usually occurs because too much food is made.
Here in Australia, this is a particular focus for the energy and resources sector, when it comes to workforce dining on remote mining villages across Queensland, Western Australia and South Australia. ISS has a substantial footprint in this sector and serves over 3 million meals a year to Australia’s mining workforce.
ISS has a global target to halve food waste by 2027, three years ahead of Sustainable Development Goal 12.3. To achieve this goal, the organisation’s global partnership with Winnow has helped to automate food waste reporting and drill down into the types of food waste that occurs. This AI-enabled technology provides data to drive improvements in kitchen production processes to help cut food waste in half, reduce spend and our environmental footprint at the same time.
Kitchens that use Winnow tend to see a 40-70% reduction in food waste within 6-12 months, driving food cost savings in the range of 2%-8%.
In the energy and resources sector, this technology has given ISS food teams in remote services greater visibility in their kitchens. Winnow enables them to understand food waste by category, weight and CO2 output – critical data, combined with daily or weekly reporting, to measure and manage food production and consumption.
